Mine seem to mostly pop up if i've been under prolonged physical or emotional stress. I take a probiotic. It helps with my overall day to day digestion but when i'm flaring, it doesn't make much of a difference for me. Sometimes, it takes a while for the meds to kick in. And maybe when you stop the food journal, you're eating stuff you're not aware of and it is aggravating things. It is frustrating. I hope you start feeling some relief soon. Of course she chose the pepto and it worked for her! I wish it were that easy for crohn's. You may want to ask your dr about it. Also, as for as the lialda(if it is in the same category as asacol and pentasa); i would be very careful with that drug because in some instances it can make the condition worse.
